Easy French Macaron Recipe

This is possibly the easiest French meringue method. Perfect for home baking.

Dark chocolate is amazing on its own, but adding a strong floral, fruity, or spicy note and pairing with red wine will elevate its flavor profile and sophistication to a whole new level.  The orange essence goes beautifully with the whipped dark chocolate ganache, but you could easily replace orange with grape or black currant. 

INGREDIENTS:
Shells: 

2 egg whites
3/4 cup almond flour
1 cup powdered sugar
1/4 cup granulated sugar
4 drops of sunset orange gel food coloring
1 tsp orange extract

Filling:
4 oz semi-sweet chocolate chips
2 oz whipping cream

DIRECTIONS:
To make the shells:
  1. Follow my “Easy French Macaron Recipe”.
  2. Let the shells cool completely before assembling the macaron sandwiches.

To make the filling:
  1. Mix the chocolate chips and the whipping cream in a microwave-safe bowl.
  2. Microwave at medium power level for 30 seconds at a time. Stir regularly until the chocolate chips have completely melted and the ganache is smooth. 
  3. Cool the chocolate ganache in the fridge for 30 minutes.
  4. Whip the cooled chocolate ganache with an electric mixer for 2 minutes until it is light and fluffy.
  5. Place the whipped chocolate ganache in a piping bag with a 1/4-inch round tip.
  6. Pipe the chocolate ganache between two macaron shells to make a sandwich.
  7. The macarons will improve their texture (mature) when left in the fridge overnight. ​
  8. Enjoy!
