Easy French Macaron Recipe

This is possibly the easiest French meringue method. Perfect for home baking.

From June to August, Provence’s air is filled with the aroma of blooming lavender. Lavender is widely used in Provençal cuisine. With delicately fragrant shells and dark chocolate buttercream, the Lavender Chocolate macaron brings you to a stroll in the lavender fields in Sault, France. Pair with black coffee or a dessert wine such as port.

INGREDIENTS:
Shells:

2 egg whites
3/4 cup almond flour
1 cup powdered sugar
1/4 cup granulated sugar
3 drops of culinary-grade lavender oil
Dried lavender flowers for decoration
Purple liquid food coloring for airbrush

Filling:
1 cup confectioners' sugar
1/2 cup salted butter, softened at room temperature for least 30 minutes
1/2 cup special dark cocoa powder
2 tbs cold water
1 drop culinary-grade lavender oil

DIRECTIONS:
To make the shells:
  1. Follow the “Easy French Macaron Recipe”.
  2. Add the lavender oil to the batter before making.
  3. After baking and the shells are completely cool, use an airbrush instrument to spray purple food coloring on the shells.
  4. Let air dry completely before assembling the macaron sandwiches.

To make the filling:
  1. Whip the butter for 1 minute until it is light and fluffy.
  2. Add the confectioner’s sugar, cocoa power, lavender oil, and water gradually while whipping.
  3. Continue to whip at medium speed for 5 minutes.
  4. Filling a piping bag with a ⅓ inch round tip.
  5. Pipe the filling between two macaron shells.
  6. The macarons will improve their texture when left in the fridge overnight. ​
